PEA AND POTATO BURGER



PEA AND POTATO BURGERS are tasty, very easy to prepare and healthy. Excellent to bring to the table still hot for a dinner that satisfies everyone. An alternative to classic meat burgers, these pea and potato burgers are vegetarian, perfect for serving with COLORFUL BURGER BUNS. You can choose to use fresh, frozen, or canned peas for a faster version. If you try them, you will love them for sure because these burgers are really delicious and fragrant with fresh mint and basil, two aromatic plants that enhance the taste of this dish even more.

Ingredients

250 g peas, canned, drained
200 g potatoes
1 egg
2 tbs pflour
basil leaves
mint leaves (fresh mint)
extra virgin olive oil
salt
breadcrumbs

Preparation

First of all, cook the potatoes in salted water for 30 minutes from boiling. Once this is done, remove the peel and cut them into small pieces in a bowl. Also add the already cooked peas, removing their liquid. Let cool then salt, add the chopped basil leaves, fresh mint and egg. Mix everything with a fork to mix the ingredients. Then move everything to a blender to obtain a fairly homogeneous mixture, if there are a few whole peas left it is fine too so as to make the burgers even prettier. The mixture must be malleable and firm, if it is a little liquid add a tablespoon of breadcrumbs. Once this is done, take a little bit of dough and form a ball with your hands. Then crush the ball to form the burger and pass it on a plate with flour. Flour all sides well and continue like this until all the mixture is finished. Finally, put a drizzle of extra virgin olive oil in a non-stick pan and brown the burgers a couple of minutes on each side until they are golden brown. You can also bake the burgers in the oven on a baking sheet lined with parchment paper with a drizzle of extra virgin olive oil at 190 ° C for about twenty minutes. These pea and potato burgers are delicious and very easy to prepare.
