Mediterranean-style salmon fillets
Mediterranean-style salmon fillets are an excellent second course, which contains all the flavors of our cuisine and releases its typical aromas.
INGREDIENTS
Salmon 500 g
Yellow cherry tomatoes 150 g
Cherry tomatoes 150 g
olives 50 g
Salted capers 10 g
Garlic 2 Cloves
Oregano to taste
Salt to taste
Black pepper to taste
Extra virgin olive oil to taste
Thyme to taste
Preparation
To prepare the Mediterranean-style salmon fillets, cut the cherry tomatoes in half and season them with 2 cloves of garlic, salt, pepper, oil and oregano 3. Mix well and set aside. Remove any bones from the fillets with the special tweezers. Place them in a baking tray lined with parchment paper. Pour in the cherry tomatoes, desalted olives and capers. Season the salmon with oil, salt and pepper, then add sprigs of dried oregano and fresh thyme all over the baking tray. Bake in a preheated static oven at 230 ° C for about 20 minutes. Mediterranean-style salmon fillets are ready.
Preservation
The Mediterranean-style salmon fillets can be kept in the fridge for 2 days. I do not recommend freezing.
Advice
If you prefer, you can use a single type of cherry tomatoes and enrich with other aromatic herbs such as marjoram, basil or fennel, even fresh oregano instead of dried oregano, if you prefer. To make sure there are no bones on the fillet, pass over the palm of your hands, to the touch you will immediately feel the presence of any bones, extract by pulling them in their direction, so as not to ruin the meat.
