Coffee ice cream biscuit

8 Digestive biscuits50 g coffee125 g whipping cream150 g mascarpone80 g icing sugar
Steps
Prepare the cups of ristretto coffee immediately and put it to cool, then put it in the refrigerator which will serve you nice and cold. In the glass of the electric mixer, add the fresh cream with the mascarpone and start whipping, add the icing sugar and coffee. It will take 30 seconds and the cream for the ice cream biscuit is immediately ready. I lined a tray with plastic wrap and placed the pastry cutters, I have two of the same size. I inserted the biscuit writing in the pastry cutter and immediately the coffee cream. I closed with another cookie with the writing on the outside by pressing lightly. The same was done with the other pastry cutter. I put in the freezer to let the cream settle only 15 minutes, to remove the pastry cutter. So I repeated the operation with the other biscuits as well. And here they are ready after leaving them for two hours in the freezer ready to be enjoyed.
