A friend from Turkey taught me how to cook aubergines, tastier than meat! 🍆🔥 



I learned a preparation that I didn't know, the title had put a lot of curiosity in me and honestly I find that this is a great recipe. I still like eggplants, but enriched in this way they are even more tempting! 

Ingredients
Eggplants: 3 pieces
For boiling:
 Water: 3 liters
 Salt to taste.

For the coating:
 Eggs: 4 pieces
 Salt and ground pepper: to taste
 Mayonnaise: 1 tsp
 Mustard: 1 tsp

 Breadcrumbs: 1 cup
 Flour: 4 tablespoons
 Smoked Paprika: 1 tsp

For the frying:
 Well heated oil

 Preparation

Prepare the aubergines:
Bring 3 liters of salted water to the boil. Cut the aubergines in half then into slices. . and immerse them in boiling water. Cook for 1 minute, then remove the aubergines from the water and let them cool slightly.

Prepare the coating:
In a bowl, beat the eggs with salt and pepper. Add mayonnaise and mustard, mixing well.

Breading the aubergines:
Dip each one first in the flour, then in the egg mixture, and finally in the breadcrumbs mixed with the smoked paprika.

Fry the aubergines:
Heat the oil well in a pan. Fry the eggplant until golden brown on both sides, starting over high heat. Reduce the heat and cover, leaving to cook for another 5 minutes.

Serve:
Serve the aubergines hot and crunchy. Perfect as a side dish or vegetarian main course.
