Vegetable sauce for Pasta
VEGETABLE SAUCE is a simple and very tasty pasta sauce. A VEGETABLE SAUCE without meat, vegetarian. An explosion of flavors and colors, which will surprise you with every bite. A light, summery and very easy recipe, suitable for the whole family, even for children. In this case, or even for those who don't really like whole vegetables, you can blend everything and get a creamy and fragrant pesto. To prepare this sauce, given the season, I use: peppers, eggplant and zucchini. But you can vary the vegetables and quantities according to your taste. For example, you can add carrots, mushrooms... You can also freeze it so you always have it ready. In addition, after seasoning some pasta with it, you can put it back in the oven, with the addition of grated and chopped cheese. In this way you will get a delicious and tasty baked pasta. A perfect ragù for vegetarians and vegans but also for those who love the classic meat sauce.

700 ml Tomato puree1 aubergine1 bell pepper (red, small)2 Zucchini (small)half an onionOlive oilSaltBasil
Preparation
To prepare the VEGETABLE SAUCE, start by preparing the simple tomato sauce: Pour a drizzle of olive oil into a pan and brown half of the chopped onion. Then, add the tomato puree and cook over low heat. In the meantime, wash the vegetables and trim them. Cut the eggplant, bell pepper, zucchini and the remaining other half of the onion into small cubes. Pour some olive oil into a pan and fry the vegetables for about 10 minutes until soft. At the end, turn off the heat and drain them from the oil. Add the vegetables to the simple tomato sauce, stir and season with salt, a pinch of black pepper and fresh basil leaves. Stir, cover with a lid and continue cooking the VEGETABLE SAUCE for about 15-20 minutes, just long enough for the vegetable sauce to mix well. At the end of cooking, use the VEGETABLE SAUCE to season pasta. Alternatively, you can blend everything with an immersion blender, in this way you will not have problems with those who do not like chopped vegetables, such as children. You will get a really tasty vegetable sauce.
