Sausage sauce
Meat sauce is the most loved sauce by Italians and can be prepared in many ways. When you try sausage ragù, it will probably become one of the favorite dishes of the little ones in the house. This sauce is perfect with pasta, rice, potatoes: practically everything. And it's not hard to prepare.
Meat sauce lovers impatient to bring a tasty first course to the table... The solution is sausage gravy! A way to enjoy a richer and more flavorful pasta than the sauce with simple tomato sauce, without waiting for the long cooking times of the classic ragù. This sauce goes wonderfully with tagliatelle, bucatini, lasagna and so on and so forth! A rustic combination, that of sausages with tomato, which has always inexorably attracted the scarpetta... Sausage sauce, however, is not only good for making appetizing first courses: try to combine polenta with sausage and cheese and you will have obtained a unique dish that will literally lick your lips!
INGREDIENTS
Sausage 500 gTomato puree 400 gCarrots 11 golden onionCelery 1 coastThyme to tasteExtra virgin olive oil to tasteFine salt to tasteBlack pepper to taste
PREPARATION
To make the sausage sauce, first peel and finely chop the onion, the carrot and celery. Remove the casing from the sausage and break it up with your hands, then pour the vegetables for the sauté into a saucepan. Add a drizzle of oil and cook over low heat for about 10 minutes. At this point, add the sausage to the sauté, turn up the heat and sauté for 5 minutes over high heat. Pour in the tomato puree, season with salt and pepper and cover with the lid. Cook over low heat for about 45 minutes, stirring occasionally. After this time, turn off the heat, flavor with thyme leaves. And give it a stir. Your sausage gravy is ready to use!
PRESERVATIONThe sausage gravy can be stored in the refrigerator for 2 days. You can freeze it after cooking.
ADVICEIf you prefer, you can use rosemary instead of thyme to flavor your sausage sauce. For a spicy note, you can add fresh or dried chili peppers, or hot paprika!
