Spaghetti alla chitarra
Here's how to make the real original recipe for spaghetti alla chitarra, a typical first course of Abruzzo cuisine. With their square-shaped section, spaghetti alla chitarra is a type of pasta that lends itself well to being seasoned with sauces of a certain importance. They are typical of Abruzzo cuisine but are also prepared in other areas of Italy, where they take different names. In fact, we find a similar pasta in Lazio, which takes the name of tonnarelli and in Puglia the troccoli are prepared. However, to prepare this homemade egg pasta you will need a few ingredients. Let's see how to make square spaghetti from Abruzzo.
INGREDIENTS
Durum wheat semolina 400 gr
Fresh eggs 4
Salt to taste
PREPARATION
Start the preparation of the spaghetti alla chitarra recipe by sifting the semolina in a very large bowl. Create the classic fountain by making a hole in the middle and place the shelled eggs inside, then adding half a teaspoon of fine salt. Beat the eggs with a fork, gradually collecting the semolina, and continue kneading by hand until the mixture is smooth and homogeneous. To be of good quality, the dough must be kneaded for a long time, that is, for at least ten minutes. This process allows it to resist cooking and to keep the flavor of the egg and that of the semolina distinct. Form a loaf and wrap it in plastic wrap, letting it rest in a cool, dry place for at least 1 hour. After the resting time has elapsed, take pieces of dough and roll them out with a rolling pin making a sheet that is not too thin of about 5 mm, as long as the wires of the guitar. At this point, place the dough on the strings of the guitar and roll the rolling pin over it, back and forth, until the dough forms and falls into the wooden crate below that you have sprinkled with a little semolina. Take the spaghetti alla chitarra and place them on a pastry rack or floured pastry board to dry. The spaghetti alla chitarra is ready to be cooked and seasoned.
Wine experts think this Italian Chianti classico red wine would be a perfect pairing with this dish.

Intense and brilliant ruby red color, intense aroma of black cherries, harmonious and with notable body. Elegant, with excellent flavor. Balanced, rounded, which comes out with good persistence after a decidedly long finish.
