Mezze maniche pasta with cream of potatoes and saffron, sausage and walnuts 🤩❤️ 



This pasta with cream of potatoes and saffron, sausage and walnuts was born by chance but I assure you that it is DELICIOUS! Easy to make but very scenic to present at the table, thanks also to the color of saffron that makes everything more appetizing. You can replace the sausage with diced speck, but I can assure you that this combination of flavors will leave you speechless! The creaminess given by the cream of potatoes and saffron, the texture of the sausage and the crunchy of the walnuts, a spectacle. 😍 Run to the stove now and let me know what you think!

Ingredients

180 g mezze  maniche
100 g sausage
1 sachet of saffron
walnuts
extra virgin olive oil
2 potatoes
salt
Spicy Paprika

Steps

Start by boiling the potatoes, peel them and mash them well with a fork, until you get a puree or if you prefer you can blend them to get a smoother cream. In a frying pan, brown the crumbled sausage without adding fat and without the casing. Boil the mezze maniche. Take a little of the cooking water, dissolve the saffron inside and add it to the cream of potatoes until you get a creamy and smooth consistency. Drain the pasta al dente, keeping a little water aside. In a frying pan, put half of the potato cream, the mezze maniche and a ladle of cooking water to finish cooking the pasta. Add the sausage and the remaining cream of potatoes towards the end, sautéing everything. Serve with crumbled walnuts and a sprinkling of hot paprika or chili powder. Enjoy your meal!
