Pizza With Chickpea Flour and Olives
Sweet and nutty chickpea flour compliments savory olives and hard ricotta cheese in this simple vegetarian pizza recipe.
INGREDIENTS
2 1/2 CUPS of all-purpose flour1 1/2 CUPS of chickpea flour3/4 OZ. of brewer’s yeastolive oilsalttomato passata or tomato pureeblack oliveshard ricotta for gratingextra-virgin olive oilsaltpeppercorns
METHOD
In the bowl of a kitchen mixer, combine the two types of flour with a pinch of salt, the crumbled yeast and 1 Tbsp. oil. Gradually add 1 cup water in small amounts. When dough is smooth and elastic, cover with a towel and let rise for around 2 hours in a warm place. Preheat the oven to 480°F. Grease 4 baking sheets or 4 round pizza pans with oil. Divide dough into four pieces and roll out to form pizzas crusts. Transfer each one to a pan. Top dough generously with tomato passata in circles. Sprinkle with salt and let rest for 20 minutes. Bake for around 20 minutes; remove from the oven and sprinkle with plenty of grated ricotta, olives, freshly-ground pepper and a drizzle oil. Bake until the cheese begins to melt. Remove from the oven and serve immediately, piping hot.
