Caramelized clementine wedges

200 g sugar
mandarin juice
clementine

Procedure

For the caramelized clementine wedges recipe, collect 200 g of sugar, 2 tablespoons of water, a few drops of mandarin juice in a small saucepan, bring to the heat and caramelize until golden. Dip the cleaned clementine wedges in the caramel, then place them on a wire rack and let them cool and crystallize. If the caramel thickens too quickly, add a little water and bring it back to the heat briefly to make it liquid again and be able to complete the operation.
