Mixed skewers
Skewers are preparations that are widespread all over the world. In Japan they are called Yakitori, in Spain Broquestas, in Peru Antochus and in Greece Souvlaki. They are born as street food and can be prepared in a variety of ways and with different types of meat. Mixed meat and vegetable skewers are made with pieces of beef and pork, chicken and sausage alternating with vegetables such as peppers, zucchini and onion slices.
Pork, beef, chicken, peppers, lard, sausage, bell pepper, onion and so on and so forth, all passionately together to make a horrible experience that could be great. Yes, you read that right, because skewering is a spectacular technique that gives infinite satisfaction, as long as it is done correctly. Let's start with what's wrong: you all know that different meats require different cooking, in a skewer made up of alternating cubes of meat, it will be impossible to get the cooking of all of them right: if we focus on beef, pork and chicken will be raw, if we follow chicken, the beef will have the consistency of a cork. If, in addition to that, we also insert some greens, the survivors will only be the memory of that colorful and crunchy piece that we expected to taste. In the face of this, I have seen solutions that are as imaginative as they are ineffective, I have read recipes with harnesses, brushing before, during and after cooking, marinades, all very valid techniques, but not if applied in this way. Oiliness can never restore the lost succulence. And what about the round stick? A brilliant idea born in the mind of those who have probably always grilled in the pot! But I say, the fact that the meat undergoes transformations during cooking is well known, that the fibers placed during cooking tend to begin to contract as well, and so why not associate these things and accept that the hole caused by the stick, during cooking, will be destined to widen? With the result that, in an attempt to move the skewer or withdraw it, all those pieces that will not remain attached to the grid, once lifted, will rotate on themselves, obviously positioning themselves in any way except in what you need. I wouldn't even underestimate the nice tendency of the stick to burn after a few minutes, if you have never burned a stick you have never cooked a skewer all the way!
In addition to the precious secrets to discover to prepare the best meat skewers in the world, there are also several cooking methods that you can use for the preparation of these delicious meat bites! There are many recipes for meat skewers and, of course, the side dishes with which to accompany them are also essential for the perfect success of an outdoor lunch or a dinner with friends. Spices and aromatic herbs are also the perfect ingredients to add to give a strong and inviting aroma to your skewers, that extra touch to flavor the meat and enjoy it at its best. However, there are some tricks and cooking methods that are ideal for this type of preparation: let's see what they are!
Cooking Tricks
Marinating meat: use oil, wine or beer, herbs and spices. Gently massage the meat skewers and let them flavor for at least 30 minutes before cooking. When it's time to cook them, drain them from the marinade you have chosen and, if you are using the grill, brush them throughout the cooking phase with their liquid kept aside. You will get soft meat skewers with a unique taste. The lid: cover the meat skewers during cooking, it creates the steam effect and the meat will remain moist and tasty. However, remember to remove the lid 5 minutes before cooking, so that the meat skewers can brown perfectly before serving. Toothpicks: if you are not using ready-made skewers and have chosen grilling then do not forget to wet the wooden toothpicks, so that they do not burn or blacken too much. Soak the wooden sticks in cold water for 30 minutes and then skewer the meat. Alternatively, you can also use steel skewers.
Cooking Methods
As already mentioned, meat skewers are ideal to bring to the table for an appetizing dinner, which everyone will agree on. After discovering a few tricks to improve its flavor and texture, here are also the best cooking methods to prepare skewers. In the oven: grease a baking tray with extra virgin olive oil and place the skewers on it so that there is a few centimeters of space between them. Drizzle them on the surface with a drizzle of oil, pepper, spices and herbs of your choice. You can also add, if you like, the juice of half a lemon or directly a few thinly sliced slices. Cover with aluminum foil and bake at 180°C for 25 minutes. Halfway through cooking, turn the skewers over being careful not to pierce them (use kitchen tongs). With 5 minutes to go before the end of cooking, remove the foil. Before serving your meat skewers in the oven, add a pinch of salt. In a frying pan: in a large frying pan, heat a drizzle of extra virgin olive oil and fry a crushed garlic clove with a sprig of rosemary. Add the meat skewers and brown them well on all sides, using kitchen tongs. Deglaze with a little white wine, beer or citrus juice and cover with a lid. Cook over medium heat for 15 minutes, then remove the lid and finish cooking after adjusting salt and pepper. Grilling: Marinate the meat skewers as recommended above and according to your taste, then turn on the grill. When the grill is up to temperature, place the skewers drained from the marinade. Turn them several times without piercing them with a fork and brush them from time to time with the marinade so that they flavor optimally.
