Farmer's eggs
Perfect for scarpetta lovers, they are delicious, quick and easy to prepare for lunch or dinner every day. Eggs are a quick, delicious and very versatile dish. This richer and tastier version of the classic eggs with tomato sauce is prepared in half an hour and is really easy. The recipe for farmer's eggs is perfect for a family lunch or dinner. Although it is an easy and cheap dish, it is really delicious and tasty. In fact, of all the ways to cook eggs, this is a true comfort food. The tomato sauce, egg yolks and stringy cheese, then, are a real invitation to make the scarpetta!
Farmer's egg recipe
But how do you prepare the farmer's eggs? This dish is prepared directly in a pan and baked in the oven. On the bottom of our baking dish we put the tomato puree seasoned with salt, oil, basil and, if we want, a little chilli. Then add the diced sweet scamorza cheese and the eggs. Season with salt and complete with a little grated cheese and, if you like, a few basil leaves. Baked farmer's eggs cook in half an hour. For the first 15 minutes, bake everything covered with aluminum foil, then remove and complete without.
Recommendations
We can enrich the dish by adding what we like best, for example slices of cooked ham, olives, mozzarella, sun-dried tomatoes. In short, anything that goes well with eggs can be added to the recipe. A tip for cooking: if we want "melting" egg yolks we can cook for five or six minutes less. This delicious main course should preferably be prepared on the spot, so that it can be served hot and with stringy cheese. To optimize the time we can prepare the pan with the sauce and cheese in advance and then add the eggs and bake. If we want to reduce cooking time, we can also cook peasant eggs in a pan, just put everything in the pan instead of in the pan. In this case, we recommend using a ready-made sauce or cooking the tomato sauce first, so that it is flavored.
Preservation
Farmer's eggs can be stored in the refrigerator for up to two days. My advice is to enjoy them immediately, as soon as they are ready so as not to miss a stringy and decidedly succulent second course.
How to serve them
Simple to prepare, full of flavor and don't require too much time in the kitchen: farmer's eggs are ideal for a family lunch or dinner, in any season of the year! Let yourself be overwhelmed by your tastes and imagination to enrich the dish as you prefer, not forgetting to keep the bread ready to make the scarpetta.
