Grilled chicken breast with rice and asparagus



Now that asparagus is one of the seasonal vegetables, I decided to prepare this chicken breast with asparagus, a really simple and delicious dish! Asparagus is a very versatile vegetable that lends itself well to the preparation of both first and second courses, and also on its own as a simple side dish. This recipe is a quick way to make a main course, as meat cut in this way will cook very quickly, or a complete dish accompanied by fresh bread. And now let's get to work!

Ingredients

500 g Chicken breast (sliced)
1 bunch Asparagus
1 Lemon
Salt
Pepper
Extra virgin olive oil
Flour
200 gr of rice

Preparation 

Clean the asparagus by cutting off the low, hard and woody part. Peel the remaining stem with a potato peeler except for the tip. Wash the asparagus under running water and dip it in a pot of boiling water for 10 minutes. Cut the chicken breast and flour it. Heat the extra virgin olive oil in a large pan and brown the chicken breast, turning it on both sides, for 10 minutes over medium heat. In another pot, boil the rice for 25 minutes and drain. Season with salt. Wet the chicken with the juice of half a lemon and, if necessary, add a few tablespoons of water. Drain the asparagus, and add to the pan. Turn over and cook for a few minutes. Add a pinch of pepper and your chicken breast with asparagus is ready! Enjoy your meal!
