INGREDIENTS 

8 slices of bread
4 slices of ham
4 eggs
50 g butter
1 escarole heart
Salt
Black pepper

PREPARATION

Toast the bread slices on a wire rack on both sides. When they are golden, cover half of them with the slices of cooked ham and a few tender escarole leaves seasoned with oil and salt. Cover with the remaining slices of bread and, in the meantime, melt the butter in a pan. When the butter is bubbly, cook the fried eggs in it, glazing them from time to time with a few spoonfuls of the bottom. Once cooked, season with salt and a good grind of black pepper, then place them on the slices of bread and serve. A delight.
