Turn potatoes into a succulent dish

Unlike the usual hyper-caloric parmesan that provide liters of béchamel sauce to be added to the layers of potatoes, this recipe is without béchamel, a small variant that allows you to better enjoy the taste of all the ingredients that make up the recipe.



INGREDIENTS

Potatoes
Grated Parmesan cheese
Prosciutto
Mozzarella
Butter
Chopped parsley
Breadcrumbs
Salt
Pepper

PREPARATION

Using a large and deep pot, boil the potatoes in salted water and cook them al dente. Once the right cooking consistency has been reached, peel and slice them. You can cool them under cold running water before peeling them so as not to burn your fingers. Cut the mozzarella into slices and start composing the parmigiana. Take a baking sheet, oval or rectangular depending on your preferences, and butter the base. Instead of butter you can use oil, 6 tablespoons to replace 50g of butter. Now start to place a layer of potatoes on the bottom of the pan, alternating slices of mozzarella and cooked ham. Throw a sprinkling of grated Parmesan cheese, parsley and butter flakes, or a drizzle of oil, between one layer and another. Continue until you reach the edge of the baking tray. Finish by sprinkling the surface with plenty of Parmesan cheese and a sprinkling of breadcrumbs and pepper, in order to create a tasty crust. Bake the parmigiana at 180°C for 30 minutes. Remove from the oven, let cool for a few minutes and the dish is ready. You just have to serve!
