Stuffed roast roll

Ingredients

800 g beef
200 g onions 
100 g minced walnuts 
50 g grated stale bread
100 g minced meat 
50 g Parmesan cheese 
50 g grated cheese
Salt and pepper to taste 
2 eggs
50 g breadcrumbs
400 g bacon to coat the roll

Preparation 

Preparing this special roll, it is easier than you think. Start by pouring the eggs into a saucepan and let them cook for 20 minutes since it reaches the boil. Once cooked, drain, peel and keep aside. Cut the onions into thin slices and let them cook in a pan with a little olive oil until they soften and caramelize slightly. Take the beef and, with the help of a sharp knife, open it so that it forms a rectangle. Pour minced meat into a bowl, add the nuts, caramelized onions, hard-boiled eggs cut into chunks, grated cheese and Parmesan flakes. Season with salt and pepper and mix everything adding a little stale bread wet and squeezed to remove excess water. Spread the preparation inside the meat and wrap the meat forming a roll. Wrap the roll with bacon or bacon and secure with kitchen twine. Sprinkle again with a little breadcrumbs, even the outside of the roll for an even tastier and crunchy result. Place the totolo on a baking sheet lined with baking paper and bake it in a preheated oven at 180 degrees for about 1 hour or until the meat is cooked and the bacon or bacon is golden and crispy.
