The pork loin with plums it must be said that it is perfect for Sunday and lunch when the whole family gathers around a table, ideal in the colder seasons such as Autumn or Winter, always gives great emotions with its particular taste and its divine scent. Ingredients

PORK LOIN 800 Gr
SHALLOTS 3
THYME q.b.
LAUREL 1 leaf
SAGE 2 leaves
PLUMS 200 Gr
VEGETABLE BROTH 500 Ml
HONEY 1 table spoon
EXTRA VIRGIN OLIVE OIL 3 table spoons
SALT to taste
PEPPER to taste
BUTTER 20 Gr
ROSEMARY 3 Twigs

Preparation

When you want to make the recipe of pork loin with plums first make a deep bag by cutting with a long sharp knife so that it pierces the entire length. Then insert the plums in the center. Close the meat with kitchen string, salt and pepper everywhere, then massage it. In a pan put a knob of butter in a drop of oil and melt and then seal the meat in it adding sage, bay leaf. thyme and rosemary. Also put shallots and other plums. Brown each side of the piece of meat, including the two ends. Sprinkle with hot broth. When the broth is almost all evaporated, put in the oven, static mode at 200 C degrees for about 40-45 minutes. After this time, take it out of the oven and as soon as it is possible to handle it, roll up the pork loin with silver paper. Always add the honey in the same pan, then remove the herbs and glaze. Discard the loin, remove the string and cut the piece of meat into slices. Serve adding the sauce that has formed.
