For the baked quails, I have chosen a side dish that is cooked at the same time, namely potatoes. Everything is seasoned in a very simple way, so with olive oil, salt and a few sprigs of rosemary, however if you have a mix of spices for roasts, homemade or of industrial origin, the dish is enriched even more, both on quails and potatoes. Alternatively, you can combine the quails with a little hot polenta.
Baked quails can also be prepared with a filling made from other meats, cheeses, and vegetables. Of course, it's not like making a stuffed chicken or turkey: the amount of meat in a quail is quite small but very tasty – so you can even overdo it with the stuffing if you're really hungry at the time.

Preparation
Rinse the quails and check that there are no pellets left if they come from game. Let them dry. Place the quails in a baking dish brushed with oil. Peel the potatoes and cut them into coarse cubes. Add them to the gaps between quails in the pan. Brush everything with oil and add salt here and there and a little rosemary. Bake in a preheated oven at 150°C for about 50 minutes.
NoteYou can add other side elements along with the potatoes in the baking dish, such as diced peppers. Another side dish that can go well with baked quails, but cooked separately, is polenta.
