PREPARATION

Finely chop the bacon with the onion, the clove of garlic and the parsley leaves. Sauté the beaten in a terracotta pan together with the oil. When it is lightly browned, add the mushrooms cleaned, washed and cut into small pieces. Stir, let it flavor, then pour the white wine and let it evaporate. Then add the tomatoes deprived of the skin, seeds and chopped with a fork. Season with salt and pepper, stir and let the sauce shrink. Meanwhile, pour the pasta into salted water and cook it following the cooking times written on the package. Drain al dente and season with the prepared mushroom sauce and sauté everything in a pan for a few minutes.

Pasta with mushrooms is a first course that I can make both when the mushrooms are fresh in season and with dried and frozen mushrooms.
