Ammuddicati peppers
The "ammuddicati" peppers is a typical Sicilian recipe that is very simple and at the same time tasty. Cooked in a pan, with the classic ingredients of the island's cuisine, capers, olives and pine nuts, they are sprinkled, almost at the end of cooking, with a good sprinkling of cheese and breadcrumbs that give the dish the right degree of crunchiness. A recipe that can be prepared in a short time and is also an excellent appetizer. For this preparation we will use red or yellow fleshy peppers.
INGREDIENTS
4/5 peppers
Breadcrumbs to taste
2 tablespoons of grated pecorino cheese
A handful of capers
A few olives
A handful of pine nuts
2 cloves of garlic
4 anchovies in oil
4 basil leaves
extra virgin olive oil
Salt and pepper to taste
GUIDELINES
Wash the peppers and, after cleaning them inside, cut them into strips. Pour extra virgin olive oil into a pan, brown the garlic clove and melt the anchovies in oil with a wooden spoon. Add the pine nuts, capers and pitted and shredded olives, then add the peppers. Chop a few basil leaves on top and season with salt. Cook over medium heat, with the lid on, for about 15 minutes, taking care to turn them often, season with salt and remove the garlic. The peppers should be cooked but not overcooked. Take the breadcrumbs, season with grated pecorino cheese, add salt and pepper. Add everything to the peppers and sauté for a few minutes until the crumb is crispy. Pour into a serving dish and garnish with basil and olives. They are also delicious cold.
