Spaghetti baked in foil with zucchini



Spaghetti and zucchini baked in foil are an original first course, you will prepare a sauce with garlic and zucchini to which will then be added the pasta drained al dente. I found the recipe for spaghetti with zucchini in foil last week, consulting a cookbook in the bookstore. I have never prepared pasta with the baking method in foil. I was enthusiastic about its simplicity and speed of preparation. Why not propose it in the blog? Soon done. As I said, it is very easy: cook the zucchini in a pan with oil, shallots, parsley and marjoram; Deglaze with white wine and cook gently for about ten minutes. Boil the pasta al dente and then, after mixing it with the sauce, finish baking in an aluminum foil and wax paper. The pasta will become slightly crunchy, but without losing moisture and will finish flavoring with the zucchini sauce. Ingredients

Spaghetti 400 g 
Zucchini 350 g 
Shallot
1 glass Dry white wine
1 tablespoon Chopped parsley
1 tablespoon Marjoram
Extra virgin olive oil
Salt


Preparation

Clean the zucchini, wash them and slice them into rounds. Put a little oil and crushed garlic in a pan and let it flavor for 2 minutes, making sure that the garlic does not burn, then remove it. Now add the zucchini and cook over high heat for about 15 minutes, at the end add the rinsed capers, a pinch of pepper and very little salt... Meanwhile, cook the spaghetti, drain them al dente keeping aside a glass of cooking water and then pour them into the sauce pan, stirring well. Dissolve the Parmesan cheese in 2 or 3 tablespoons of the cooking water and add it to the pasta. Arrange the seasoned dough on a sheet of baking paper or aluminum foil, making sure that the surface remains garnished with some zucchini washers. Close the edges tightly like a cord leaving enough play between the food and the paper, then put in a hot oven at 180 ° C for 5 or 10 minutes. Serve by bringing the open foil to the table on a serving plate or by unmolding it into a hot serving dish.
