Pizza with diced tomatoes, arugula and shaved parmesan
Pizza is one of the gastronomic preparations for which my home country boasts a world record. As much as everyone imitates it, it is really difficult to find someone who can get to prepare a pizza like mine. Which then maybe are also the very good ones, but it would be better to call them in another way! ;) And for the series 'honor to merit', I recognize the great skill of Neapolitan pizza makers, who are contended not only throughout Italy, but also in the world.
For how many Italians Saturday night is not Saturday without pizza? Well I'm definitely one of them, I love to prepare pizza on Saturday or order it (the only food I order!). I like to try new flavors, although I believe that the best is always the pizza margherita: simple and tasty! Today I explain how to make pizza with cherry tomatoes, rocket and parmesan flakes, of which in my family we can consider ourselves very experts, since my wife in the pizzeria always orders this and every time we find ourselves quibbling about how they prepared it, since not everyone does it the same way.
Ingredients
For the dough
500 gr of flour
300 ml water (lukewarm)
30 gr of olive oil (extra virgin)
20 gr of brewer's yeast (fresh)
1 teaspoon barley malt
9 gr of salt
For the filling
150 gr cherry tomatoes
100 gr of rocket
Parmesan cheese to taste (flakes)
100 gr of mozzarella
olive oil to taste (extra virgin)
salt to taste
Preparation
To prepare pizza with cherry tomatoes, rocket and parmesan flakes, start preparing the pizza dough. Put the flour, salt, malt and oil in a bowl and start working gradually adding the warm water in which you have dissolved the yeast. Work well until you get a smooth and elastic dough, then place it in a bowl, cover it with plastic wrap and let it rise away from drafts until doubled (it will take about 4 hours). After this time, take the dough back, transfer it to a floured pastry board, deflate it with your hands and form two loaves, put them on the floured surface to rest another half hour. Then roll out each loaf with your hands and place it in a greased baking dish. Add the cherry tomatoes tagged in quarters, the mozzarella cut into small cubes, a drizzle of oil, a pinch of salt and bake in a preheated oven at 200 C degrees for 15 minutes. Remove from the oven the pizza and cover it with rocket, drained corn, cherry tomatoes cut in half and parmesan flakes. Your super pizza is ready!
