Blueberry pancakes
I had wanted to prepare blueberry pancakes for a long time and finally here they are in all their enveloping goodness. The pancake, for those who do not know it, is a traditional dessert for breakfast in North America and, with many variations, in other parts of the world. Its preparation very similar to that of crepes, requires the use of flour, milk or dairy products, eggs, butter, salt and sugar even if I did not put it. They are generally sweet, accompanied by maple syrup, honey, jam or peanut butter. However, they can also be enjoyed in a savory version, with melted butter on the hot pancake, eggs or bacon. The recipe for making pancakes is quick and easy to make. In fact, just cook in a pan and for a few minutes the batter and dessert is immediately ready to be served hot.

Preparation
Preparing blueberry pancakes is really very easy and fast. In a bowl sift together the flour, salt, baking powder and set aside. In another, work the egg, sugar, milk, melted butter and lemon zest quickly. Add this mixture to the mixture with the flour and stir until you get a smooth and homogeneous batter. Heat a nonstick pan over medium heat. When the pan is hot, grease it with butter or oil and pour a ladle of batter, creating a round pancake. Turn the pancake when bubbles form in the center, about 2 minutes. When you turn it, the bottom should be golden brown. Cook the other side until golden brown. Repeat until you finish the batter. Serve your blueberry pancakes with maple syrup or honey and blueberries. Of course in this last phase you can indulge yourself using the ingredients you like most, so maple syrup, chocolate or other fruit both fresh and dried, or simply enjoy them dusted with icing sugar.
