Zucchini and tomato spaghetti

Drain the spaghetti directly into the pan with the cherry tomatoes, add the zucchini cream, fresh basil and mix so as to obtain a rich pasta dish and at the same time cheap, enveloping, creamy and delicious! Ingredients
350 g spaghetti
500 g zucchini
350 g cherry tomatoes
extra virgin olive oil
3 garlic cloves
basil
salt
Preparation
Prepare the zucchini cream first by peeling a clove of garlic and chopping it. Sauté it in a pan with olive oil. Add the diced zucchini and cook over medium heat for 10-15 minutes, adding hot water if necessary and salting at the end of cooking. Pour the zucchini into a food processor together with a few basil leaves, and blend them until you get a cream of zucchini. Peel the remaining cloves of garlic and put them in a pan with oil. When it begins to fry add the whole or halved tomatoes and a few basil leaves. Cook for about ten minutes, adding hot water if necessary and covering with a lid. At the end of cooking, season with salt. While the cherry tomatoes are cooking, bring salted water to a boil in a pot and cook the spaghetti. Drain the spaghetti al dente and pour them directly into the pan with the cherry tomatoes. Stir with a ladle and also pour the zucchini cream. Sauté over high heat, adding a little pasta cooking water and stir so that the spaghetti blend perfectly with the sauce. Serve the pasta with cherry tomatoes and zucchini cream, decorating and flavoring with more fresh basil.
Tip
You can enrich the zucchini cream with grated Parmesan or pecorino cheese and pine nuts or other dried fruit such as almonds or walnuts.
