Guacamole and Shrimp Crostini Cups 🦐
Crostini with avocado cream, shrimp, peppers and lime are cicchetti (finger food) perfect to accompany prosecco or spritz during the aperitif. Take away everything but not the prosecco. Absolutely served iced and possibly with some accompanying cicchetto to break the appetite. Cicchetti are crostini or morsels that accompany prosecco or spritz during the aperitif. Usually they are prepared with fish, cold cuts or seasonal ingredients but nothing prevents you from indulging. Personally I am so fond of it that any excuse is good to prepare it. The most versatile and quick cicchetti to prepare are croutons. Usually on Saturdays I buy a baguette that I immediately affect and transfer to the freezer. Then I put the frozen slices 3-4 minutes in the oven with grill until toasted. The seasoning to put on it varies depending on what I have in the refrigerator at the moment. In this case I had some avocado left from the preparation of the prawns with rum. I then used it together with some lime to prepare a green sauce. To garnish everything I put frozen shrimp and some strips of pepper to give color. Because a crouton as it should also be beautiful to look at! Finally a little oil, garlic and parsley because they should never be missing with fish.
Ingredients
8 slices of toast
1/2 mature avogado
1/2 lime
1 slice pepper
16 shrimps
extra virgin olive oil to taste
1/2 garlic clove
1 tablespoon parsley
Procedure
Cut the slices of bread from a baguette. Toast them for a few minutes in the oven with grill function. Crush the pulp of the avocado with a fork and mix it with the lime (it will prevent it from oxidizing into brown). Cut out some very thin slices of pepper and set aside. Boil a saucepan of water. Soak the frozen shrimp for 3-4 minutes. Drain and set aside. In a bowl prepare a sauce by mixing extra virgin olive oil, parsley and half a clove of crushed garlic (alternatively you can use dehydrated garlic powder). Spread the avocado and lime pulp over the slices of toast. Add a couple of shrimp and a few strips of pepper. With the help of a teaspoon, pour over a splash of the sauce based on oil, garlic and parsley. Place the croutons in a cutting board or slate plate and serve.
