Cream of onion and hazelnut soup



Hazelnut soup is the unusual favorite dish of Rapunzel, the princess of the homonymous Disney cartoon: a light and delicate velvety, gluten-free and super super cuddly soup! A  recipe designed for children could help them pull themselves up a little... and help you parents keep them a little engaged in a quiet and, I hope, interesting activity. With these doses can eat 2 adults or 3-4 children (depending on age). The hazelnut soup is a delicious soup that will surprise young and old! You can customize it by adding porcini mushrooms, pumpkin and everything you like.

Ingredients

70 gr of shelled and peeled hazelnuts
2 potatoes
500 ml vegetable broth
1/2 carrot
1/2 celery stalk
1/2 small onion
salt
extra virgin olive oil

Preparation

First peel the potatoes, wash them and cut them into chunks. Then prepare the hazelnuts, chopping them coarsely. Peel and chop the aromas, then fry them with a little oil. Add the potatoes and let them flavor, then add the hazelnuts. Add salt and toast lightly, then cover with the broth and start cooking. When the potatoes are nice soft, blend with a blender adding, if necessary, water to make the cream more fluid. That's all: your hazelnut soup is ready.
