Chicken meatloaf with spinach and ricotta

Ingredients
1 chicken breast
And the same amount of turkey (if you can grind them together)
salt
rosemary
2 whole eggs
fresh ricotta
spinach
extra virgin olive oil
Preparation
In the mixer blend together the minced chicken and turkey so as to make it fine. Add salt, chopped rosemary and 2 eggs. Blend again so as to mix the ingredients well then roll out the dough on parchment paper forming a rectangle. Meanwhile, blanch the spinach, squeeze them, blend them together with the ricotta and season with salt. Spread the mixture in the center of the rectangle forming a tile let's say, which will be the center of our meatloaf. With the help of parchment paper, wrap the meatloaf and close the flaps well. Put in a saucepan with a finger of water and sprinkle with a couple of tablespoons of extra virgin olive oil.
Bake 160 C for about 20 minutes covering it with aluminum foil, then raise to 200 C and cook without aluminum for another 35/40 minutes.
