1 Baguette Bread
8 Prawns
1 ripe avocado
2 Limes
1 clove of garlic
1 teaspoon of Paprika
2 tablespoons Extra Virgin Olive Oil
3 drops of Tabasco
salt to taste
Procedure
To prepare the Crostini with Shrimp and Avocado Cream start by cleaning the shrimp following our guide. Once the head, the carapace and the black filament of the intestine are removed, rinse them under running water and dab them with kitchen paper. In a pan heat a tablespoon of oil with the whole garlic clove, add the shrimp and cook for 3-4 minutes, turning them occasionally. Perfume them with paprika, blend with the juice of a lime and set aside, season with salt. Divide the avocado in half and dig the pulp with a spoon. Transfer it to the glass of an immersion mixer together with the Tabasco, the remaining oil, the juice of the second lime and a generous pinch of salt. Blend everything so as to obtain a homogeneous and dense cream, free of lumps. Slice the bread into slices one centimeter thick. Place them on a baking sheet and bake them in the oven with the grill mode for 5 minutes, until they are crispy. Spread a tablespoon of avocado cream on each slice, complete with a shrimp and serve your delicious fish appetizers.
Note
You can replace the shrimp with pan-seared salmon with soy sauce or with simpler smoked salmon.
