SCIALATIELLI WITH SHRIMP CARBONARA AND LEMON ZEST
Today a revisited carbonara, one of the most famous dishes of Italian cuisine with the addition of shrimp and lemon, scialatielli with shrimp carbonara and lemon zest.
Ingredients for 4 people
360 grams of scialatielli
400 grams of shrimp
4 egg yolks
1 egg
4 tablespoons of grated pecorino romano
1 lemon
50 grams of bacon
salt and pepper
Guidelines
Clean the shrimp, head, carapace and casing and keep them aside. In a bowl, beat the eggs with the cheese, salt and pepper and set aside. Cut the bacon into strips and brown it in a non-stick pan and after a few minutes add the shrimps. Boil the pasta al dente and as soon as it is cooked, stir it in the eggs. Add the shrimp and bacon and serve, completing with a sprinkling of pecorino cheese and lemon zest.
