Salisbury Steak with Mushroom Gravy 



Salisbury steak is a very popular second dish in the United States: it was created at the end of the nineteenth century by an American doctor JH Salisbury, hence the name of the dish. JH Salisbury, was a promoter of a low-carbohydrate diet recommended especially for weight loss. It is an aromatized burger that is however given the shape of a meatball or steak. A low-carb dish, which could be considered dietary, and which is usually served without bread. In my recipe I seasoned it with a sauce made with mushrooms and onions, very tasty. It usually goes well with soft mashed potatoes, but you can also serve it with a fresh salad. Salisbury Steaks are a tasty second course of meat prepared in a pan. Easy to make, they are accompanied by a mushroom-based dressing.

Salibury steak presumably descends from Germans who, starting from Hamburg, migrated to the cities of the east coast of the USA during the first half of the nineteenth century. At the time, in New York, there were some eateries that served dishes with minced meat known as Hamburg-style American fillet or beefsteak à Hambourgeoise to meet the tastes of Central Europeans. The term Salisbury steak first appeared in 1897.

Ingredients for 4 people

500 g ground beef
30 g breadcrumbs
1 large egg
1/2 onion
1 clove of garlic
2 tablespoons milk
1 tablespoon chopped parsley
1 tablespoon Worcestershire sauce
Fine Salt to taste 
Black Pepper to taste
Seed Oil to taste

FOR THE SAUCE

250 g of Champignon Mushrooms
200 ml meat broth
1/2 onion
2 tablespoons Worcestershire sauce
1 teaspoon cornstarch
Fine Salt to taste 
Black Pepper to taste

Procedure

To prepare Salisbury Steaks start by preparing steaks. Peel and finely chop both the onion and garlic, then put them in a large bowl. Add the minced beef, breadcrumbs, parsley, milk, Worcestershire sauce, egg, a pinch of salt and a sprinkling of pepper. Work until a homogeneous mixture is obtained, cover with transparent food film and let it rest in the refrigerator for at least half an hour. In the meantime, proceed with the realization of the sauce. Finely chop the onion, then carefully clean the mushrooms in order to remove any earthy residue and cut them into slices. Pour a drizzle of extra virgin olive oil into a large non-stick pan and brown the onion. Add the mushrooms, season with salt, sprinkle with a little pepper and continue cooking for about 10 minutes. Add the Worcestershire sauce and cook for another 2 minutes. Little by little, add hot meat broth, so as not to dry the mixture too much. Meanwhile, melt the cornstarch in a pan with a drop of water and add the mixture to the mushrooms. Continue cooking until you have obtained a dark and thick sauce. Meanwhile, take the meat mixture from the refrigerator and work it so as to obtain 4 oval-shaped steaks. Add them to the pan with the mushrooms and cook for about 10 minutes, taking care to turn the steaks halfway through cooking. When the meat is perfectly cooked, Salisbury Steaks are ready to be served, accompanied by mashed potatoes or homemade bread! 

Note
If you want you can also prepare Salisbury Steaks in the oven. To do this, simply cook the meat in a pan for 5 minutes, then transfer it to a buttered baking dish, cover it with the mushroom sauce and cook everything in a preheated oven at 175 ° C for about 30 minutes.
