Saffron and artichokes risotto
Great for all seasons when artichokes are fresh and tasty. Risotto with artichokes and saffron is a very simple and really tasty recipe. Time for artichokes and strong tastes. As for this risotto, simple and inviting. Yesterday I prepared saffron risotto with artichokes. I chose a very basic recipe that comes from the simplification of what for me is the recipe of risotto par excellence, or the Milanese risotto.
Ingredients
320 g Arborio Rice
5 Artichokes
Lemons
Garlic powder
Extra virgin olive oil
1 l Vegetable broth
2 sachets Saffron
Salt
Parmigiano Reggiano
1 Butter
1 glass White wine
Preparation
To prepare the risotto with artichokes and saffron we first start making the broth, while we can clean the artichokes. Then prepare a large container, pour into the water and squeeze the juice of half a large lemon, and start cleaning the artichokes. Clean the stem and then soak it in lemon water, same thing you do with your head of the artichokes, remove the hardest leaves and remove the hair inside and always put in the water. In a large pan put a little extra virgin olive oil and garlic powder and let heat (you can also use garlic in cloves, I chose the powdered one this time), while cutting into small pieces all the cleaned artichokes. When the oil is hot, add the artichokes into small pieces and brown, salt a little. I chose to leave the artichokes a little crispy so I did not cook them much, maximum five minutes, if you prefer them more tender additions of time while browning. Now pour the rice into the pan, mix together with the artichokes and toast for a while, when it becomes transparent, add the glass of white wine and let it evaporate. After the wine has faded, you can start pouring the broth, then add half a liter and let it cook turning occasionally, and then continue to pour a little until the rice is almost ready. Before the rice is cooked, add the saffron sachets, mix well, and add a ladle of broth. Once cooked, stir in butter and grated parmesan, and season with salt and chili if you like. Before serving, you can also add chopped fresh parsley. Enjoy your meal!
