1 puff pastry roll
2 zucchini
1 garlic clove
3 eggs
50 g Parmigiano Reggiano
chopped parsley
salt
Pepper
extra virgin olive oil
150 g mozzarella

Preparation

We take the zucchini, clean them, wash them and trim the ends . Cut them into slices not too thin. In a pan fry a clove of garlic, as soon as it is golden remove it and put the zucchini leaving them to fry over high heat for at least 15 minutes and stirring often. Then let's put them aside and let them cool. In a bowl we put the eggs, salt, pepper, chopped parsley, Parmesan cheese and mix well. Line a 22 cm baking tray with parchment paper, place the puff pastry inside and prick the bottom. Pour the egg dough inside, then add the mozzarella and zucchini sautéed in a pan. Bake the salted tart at 180 °C in a hot oven for 15 – 20 minutes, then to gratin the surface we increase the temperature to 200 °C ventilated oven for another 10 minutes. Once ready, take it out of the oven, let it cool and then serve it in slices.
