Ingredients
Tomatoes 800 gr. peeled tomatoes Extra virgin olive oil 30 gr.Garlic 1 cloveBasil 4 leavesSalt to taste (fine)Gnocchi 600 gr.
Preparation
In a pan pour extra virgin olive oil together with the garlic clove peeled and divided in half. After 2 minutes of cooking over high heat, add the peeled tomatoes and season with salt. Cover with a lid and cook for at least 1 hour over very low heat: the sauce should simmer very gently. Stir occasionally. After the indicated time, remove the garlic and pass the tomatoes to the vegetable mill, in order to obtain a smooth and homogeneous puree. Transfer the sauce back to the pan. Turn on the heat again very low and add the basil leaves. After a few minutes you can turn off the sauce and keep warm. At this point all that remains is to cook the gnocchi in plenty of boiling salted water.Drain the gnocchi directly into the tomato, as soon as the first dumplings come to the surface. Stir constantly, mixing everything. Finally all that remains is to serve them, and garnish with other fresh basil leaves.
