Bruschetta grilled peppers and smoked cabbage 😋😋😋😋😋
Probably when you think of salty and easy-to-prepare vegan snacks, the first thing that comes to mind is toast with homemade bread. Well, the idea itself is great and delicious. But sometimes for some occasions you may need something more sophisticated in terms of visual and flavor.
For example, in this recipe of croutons with kale and roasted peppers I still use toast as main ingredients. But, with some additional ingredients, I managed to turn simple vegan croutons into something special. The additional ingredient that gives a different flavor than usual to bread is roasted bell peppers. It gives a delicate sweet and smoky note to the taste. And as if that were not enough, there is also black cabbage. Or the so-called cousin of the most popular kale.
Ingredients
2 peppers (one yellow and one red)
4 slices of bread or ciabatta
80 g of cabbage
cheese
4 pitted green olives
Fresh basil leaves
Extra virgin olive oil to taste
Preparation
Wash the peppers, cut them into layers, remove the seeds and the white filaments inside. Cook them in a hot oven, they should be soft. Toast the slices of bread in a baking pan with a little oil. Finely chop some basil leaves and add them to the robiola. Spread the bread with the flavored cheese, place on top of the cut peppers, a few leaves of basil and the cabbage.
