Clean the spinach, then steam it for a couple of minutes. Then sauté them in a pan with a knob of butter and add salt. Turn off the heat and let it cool. Mix the milk, eggs, Parmesan, salt and pepper in a bowl. Roll out a sheet of short crust pastry about 3 mm thick and roll it out on a cake tin covered with parchment paper. Spread the spinach evenly over the pastry sheet. Pour the mixture over the spinach. Fold the dough all around forming a cord. Bake the spinach quiche in a preheated oven and cook at 180 degrees for about 30 minutes. Serve the lukewarm spinach quiche.
