Spaghetti with lemon infused crab... smoked pancetta...sun dried tomatoes... anchovies... black olives with a white wine dill cream sauce... sprinkled with roasted garlic crumbs and bacon dust👌
Spaghetti with smoked pancetta and lemon infused crab are a very simple first course, perfect for cooking a last-minute dinner. Few ingredients but with a strong flavor will allow you to prepare this very tasty pasta in no time.
Ingredients
450g crab
12 rashers of pancetta
1 shallot finely chopped
2 cloves of garlic finely sliced
6 anchovies in olive oil chopped
2 Tbls pitted black olives
12 sundried tomato's slices finely sliced
Zest of 2 unwaxed lemons and the juice of one lemon
Olive oil
Garlic oil
2 red chilis
25 g parmesan grated
200 ml double cream
100 ml white wine
100 ml fish stock
Salt and pepper
Fresh dill
Fresh basil
Fresh parsley
1 cup breadcrumbs
Pasta
4 eggs
400 g flour
1Tsp fine sea salt
1Tbls extra virgin olive oil
Preparation
Marinate the crab in the lemon zest and juice for 1 hour with some black pepper. Set the oven to 120 C and place 4 rashers of the pancetta on a baking tray until the fat has rendered out... cool and put it the fridge... then blitz to a fine crumb or dust... bacon dust. At the same time get the breadcrumbs and drizzle with garlic oil and mix together with your fingers... spread out on a baking tray and cook till golden or pan fry. Add some olive oil to a pan fry off 8 rashers of the chopped pancetta until golden add the shallot and cook for a few mins. Add the anchovies and garlic followed by the sundried tomatoes add the olives and the chili next add the wine and fish stock cook and reduce down until there is only a little liquid left in the pan add the cream and heat through add a good handful of chopped dill and a few basil leaves cook till the cream starts to bubble then add the parmesan. Once heated add the crab mixture to the pan and gently heat through. Serve with the pasta sprinkled with the garlic crumbs bacon dust a few more basil leaves and parsley😊 done👌👍
Tip
If you don't like smoked pancetta, use prosciutto. If you do not like foods with pepper, replace it with chili, or alternatively avoid spicy spices.
