Soup with spinach and white beans

INGREDIENTS
200 gr fresh or frozen spinach300 gr precooked cannellini beans1 garlic cloveolive oilsaltchili pepper4 Piccadilly tomatoes optional
PROCEDURE
In a saucepan pour a round of olive oil. Add a crushed clove of garlic and a piece of chili (if you like spicy). As soon as the garlic begins to fry, add the washed and chopped tomatoes. Let the tomatoes soften and in the meantime drain and rinse the cannellini beans. Add the beans to the sauté and stir. Add hot water until the beans are covered. Add salt, add 1 bay leaf and cover. After about 10 minutes, add the spinach, stir and cover. Within a few minutes the spinach will have softened and your soup will be ready. Decide if you want to blend a part of the soup with the mixer for a creamier consistency. If you like, you can add a little pasta to accompany your soup. Your spinach and bean soup is ready. Serve with a drizzle of raw olive oil.
