In my recipe I softened the peppers in a pan before adding them to the mix of ricotta, egg and parmesan. Everything will be poured on a base of puff pastry and enriched with cherry tomatoes, to make the savory pie fresher and tastier. Put them in a pan with a drizzle of oil, the onion cut into thin slices, salt, pepper and a few basil leaves. Also put 2-3 tablespoons of water, close with the lid and cook over low heat for about ten minutes, until the peppers are perfectly cooked. Let them cool. When they are completely cold, put them in a bowl and prepare the filling by adding the ricotta, grated parmesan, egg, mozzarella cheese and bacon (if you want to add it). Season with salt and pepper and mix all the ingredients to mix them together. Roll out a roll of dough in a pizza tin of 24-26 cm in diameter, pour the filling, level it with a spoon and close the edges of the pastry on the filling. Sprinkle the surface with a little grated parmesan cheese, breadcrumbs and drizzle with a little oil. Bake at 180°C for about 25-30 minutes.
