Fried cod and shrimp 😍



I inaugurate the week of Carnival with the first fried recipe, because let's face it, it is mandatory at this time of year. In this case morsels of cod and shrimp that becomes crunchy and fragrant when cooked.

Fried shrimps, the recipe to prepare at home a good fried shrimp, as good as the one we eat at the restaurant, indeed even better in a few simple steps. Very easy to prepare fried shrimps, it does not take much, and not even much time, it takes little to prepare them really perfect, crispy and golden outside and that remain crispy until the time to bring them to the table, dry and not greasy. Let's see what you need to prepare a good shrimp fry.

Ingredients

Shrimp 1 kg
Durum wheat semolina re-milled 200 g
Sunflower oil (abundant) to taste
Salt to taste
Lemons 1

Preparation

Wash the shrimp thoroughly under running water, wash a few at a time, putting under a colander, to collect even what we could lose. No need to remove the head, or the carapace. Let them drain in the colander for a few minutes. We put on the fire over high heat a medium pan with abundant oil and bring to temperature. In a dish we put a little' flour semolina re-milled durum wheat. We flour a few shrimp at a time, and gradually put them in hot oil to fry. We do not overlap the shrimp in the pan, but leave them spaced enough so in a few minutes they will be ready, crispy and golden. We dry on absorbent paper as soon as they are ready, then transfer them to a serving dish, and continue the shrimp frying, always in the same way. Add a little salt once ready. Serve with lemon slices. As we continue to fry the shrimp if necessary we add more oil, or replace it, since we prepare up to 1 kg of shrimp. I for 2 people I prepared a hearty fried with 500 g of shrimp, so for 4 people, if you want a hearty fried 1 kg is fine.

Fried cod: the recipe

Ingredients for about 4 people
Pepper, mineral water, seed oil and flour are the few simple ingredients to make this typical recipe that is difficult to resist.
600 gr. of Cod
100 gr. of Flour
Mineral water to taste
Pepper to taste 
Seed oil to taste

Procedure

Immerse the cod in water and leave it to soak for 24 to 48 hours to desalinate it, changing the water about every 7/8 hours. Take the cod and proceed to clean it by washing it under water. Drain it to remove all water absorbed during cleaning. Take a knife and cut it into strips about two cm long. Put the cod to rest inside a strainer. Take the flour and with the use of a fork mix it with a large amount of water just enough to obtain a smooth and uniform dough. To understand when the batter is ready, with the fork check its density by inserting it into the mixture and lifting it slowly and make sure it remains firmly on the fork. Avoid using yeast as the batter mixture should be light and highlight the flavor of the fish instead of detracting from it. It is preferable not to replace mineral water with beer because it would ruin the flavor making it unpleasant. The preparation of the batter must be carried out without resting in order to make the mixture light. When mixing with flour, it is essential to use a large amount of water in order to make a decidedly crispy frying. Avoid adding salt, both on the mixture and on the fish. Take a high pot and heat the oil, meanwhile take the cod fillets and dip them in the batter. Constantly turn the fillets from the various parts, check while the oil is ready and immerse them gently. Let the fillets fry for about 10 minutes. During frying, take a fork and turn them carefully so as to obtain a homogeneous cooking on all sides. At the end of frying, take a paper towel or straw paper and drain the fillets. Finally, add some pepper and serve hot.
