CHICKEN WITH PEPPERS, AND POTATOES

A very tasty, rustic, easy-to-make single dish… oven-cooked chicken with potatoes and peppers! Everything is cooked in a single pan, the preparation is quick and very simple, but really tasty and appetizing. I added an onion and a pinch of paprika, but you can replace it with a couple of cloves of garlic and other spices if you like. Try this recipe, and let me know!
Ingredients
4 chicken legs
1 yellow pepper (large)
1 red pepper (large)
600 g potatoes
1 onion

3 tablespoons extra virgin olive oil
1 teaspoon sweet paprika

Method
Wash the peppers, cut them in half and remove the white veins and seeds. Rinse them well and cut them into pieces. Peel the potatoes and cut them into large wedges. Season the peppers and potatoes with a teaspoon of roast herbs, a pinch of pepper and three tablespoons of extra virgin olive oil. (Do not add salt, the aromas on the market already contain enough. Arrange the vegetables in a non-stick pan or lined with baking paper. Remove the skin from the chicken thighs, then turn them once among the vegetables to lightly coat them. Season the chicken thighs on both sides with the herbs and arrange them between the peppers and potatoes. Bake the chicken thighs with peppers and potatoes in a preheated oven at 220°C in static mode. Bake for about 45 minutes, turning vegetables and chicken once halfway through cooking. Finally, take it out of the oven, let it rest for 5 minutes and serve the baked chicken with peppers and potatoes piping hot.
Tip
If you prefer to cook the chicken with its skin, decrease the oil, a spoon and a half at most will be enough.
