Bacon and shrimp with capellini




Shrimp and bacon pasta. An unusual combination and all to try that of bacon with shrimps. When we talk about guanciale our mind immediately flies to a good plate of carbonara or amatriciana. Ingredients

320 gr capellini pasta
20 Prawns
100 g Bacon 
1 sprig Parsley
1 clove Garlic
2 tablespoons Extra virgin olive oil
Salt to taste

Preparation

First put the pot with the pasta water on the stove. Then clean the garlic and parsley and chop them in the mixer. At this point take a pan, fry two tablespoons of extra virgin olive oil and a tablespoon of the prepared mince. After 1 minute add the shrimp, previously rinsed. Let them fry for 2 minutes then turn off the heat. Let them cool slightly if you do not want to burn your hands because now you will have to clean them. I still cook them with the head and carapace because it is what gives the good taste to the sauce is right there. At this point remove the heads of the shrimp trying to collect in the pan any seasoning that should leak. Keep a whole one for the decoration of the plate. Remove the carapace and tail. With the help of a small knife, make an incision on the back of the shrimp, in this way you will identify the intestine and remove it very gently. Meanwhile, in a pan, put the diced bacon with a little oil and cook until crispy. Then put the bacon aside. In the same pan where he cooked the bacon transfer the shrimp. The fat of the bacon will flavor your shellfish. Continue cooking for one minute. Meanwhile, drain the pasta al dente directly into the pan with the sauce. Sauté the pasta with the sauce over medium heat for 1 minute, turning it continuously and adding a ladle of the pasta cooking water. Taste and adjust salt if necessary. Serve hot, sprinkling with fresh chopped parsley if you like.

RECOMMENDATIONS
You can safely use both fresh and frozen prawns. If you use frozen ones, thaw them completely before cooking. If you want you can add fresh cherry tomatoes to the sauce. Those who like spicy can add a pinch of chili.
