Omelet with fresh mozzarella, green peppers and onions! 💋 




The pepper omelet is a tasty and very colorful second course, perfect for a thousand occasions but also as a delicious appetizer. The pepper omelet is a very tasty and intense second course, perfect for any season of the year. The pepper omelet can be made with pink, yellow, or green peppers but also using various colors so as to obtain a really colorful and cheerful result. The pepper omelet can also be enriched with cheese or mozzarella.

It is a really versatile and tasty dish, ideal for a nice dinner or a unique and perfect appetizer for everyone. This omelet is very fast and can be served on any occasion, let's do it now!

Ingredients

6 Eggs
2 sweet peppers
50 g Parmigiano Reggiano
1 sprig Parsley
Basil
1 clove Garlic
1 small onion
extra virgin olive oil
Salt
Pepper
150 g mozzarella

Preparation

Let's take the peppers, clean them and deprive them of the seeds and white parts. Cut them coarsely and dry them with a cloth. In a large pan heat some extra virgin olive oil, add the crushed garlic and let everything flavor. As soon as the garlic is golden, remove it from the pan and add the onion, and the peppers. Put a pinch of salt on the peppers and turn them from time to time by cooking them evenly for 10 – 15 minutes. Once ready, transfer them to a bowl and let them cool down a little. In a bowl we put the eggs and beat them well with a fork trying to mix everything. Add the chopped parsley and Parmesan, salt and pepper and stir again. Add the peppers sautéed in a pan and mix. In the same pan in which we cooked the peppers add oil and let it heat well. We pour the egg mixture and cover with a lid. We lower the heat to a minimum and cook for 10 minutes. Then turn the omelet using a lid and let put on top of the finely chopped mozzarella and basil, let it cook everything for another 5 minutes. Once the OMELET ''FRITTATA'' in PAN with PEPPERS and Mozzarella is ready, serve it and taste it.
