TUNA POTATOES


The potatoes with tuna are a tasty cold appetizer that can also be served as a side dish or main course. A light, easy and fast recipe.
Potatoes are good in all sauces! Today I propose a recipe with fresh and tasty boiled potatoes that, in reality, I prepare all year round because I like it very much.

The basic ingredients are boiled potatoes and tuna in oil but you can also add capers, gherkins, black olives, red onion and boiled eggs. For seasoning instead you can opt for Oil and Vinegar (as for the classic potato salad) or add Mayonnaise. Another alternative is to use yogurt sauce, have you ever tried?

The potato salad, with tuna is a delicious and easy to prepare recipe, ideal both in summer and winter. I prefer the version with Mayonnaise but even "without" has its reason. In that case, however, I prefer to add the tuna fillets. Follow the recipe step by step and enjoy this Simple but Tasty dish!

Ingredients

600 gr potatoes
240 gr tuna in oil
pickled capers to taste
pickled gherkins to taste
salt and pepper
parsley
red onion

PROCEDURE

Wash the potatoes and put them in a pot with cold water. Bring the water to a boil and let it boil until the potatoes are cooked. DO NOT add SALT because otherwise the potatoes absorb more water. Once cooked, drain the potatoes and let them cool. Peel the potatoes and cut them into small pieces. Put the potatoes in a bowl and season with salt and pepper. Add the drained tuna in oil, capers and gherkins. At this point decide whether to season with Oil and Vinegar or mayo. Once the potato salad, with tuna is ready, it must rest in the fridge for at least an hour. In the fridge it keeps well for a couple of days, cover it with film!
