Chicken in Wine

Ingredients for Chicken in wine for 4 people
Chicken thighs – 4 units
Onions – 3 units
Garlic cloves – 4 units
Green pepper –1/4 unit
Red wine – 250 ml
Provencal herbs- 1 teaspoon
Paprika – 1 teaspoon
Pepper – to taste
Salt – to taste
Laurel – 1 leaf
Extra Virgin olive oil – 50 ml
Procedure
Season with salt and pepper the chicken thighs. Add oil to a casserole with a non-stick bottom, when it is hot brown the chicken thighs on the outside for two or three minutes per side to seal them. Remove from pan and set aside. Meanwhile, crush the garlic and cut the green pepper and onions into thin pieces. Deposit all vegetables in a mortar or bowl and combine with paprika and Provencal herbs. Remove the chicken from the pan and add the contents of the container, the vegetables that we have filleted. Sauté for a couple of minutes until the onions become transparent. If it is too dry, add two teaspoons of chicken broth. Pour the red wine, a bay leaf, chicken broth and chicken thighs. Lower the heat and cook for 20 minutes plus five minutes. Carefully remove the chicken and leave it on a plate, also remove the bay leaf. Pour the rest of the ingredients and the remaining broth into the bottom of the casserole. In a container or glass suitable for the mixer. Beat until you get a thin sauce. Place the chicken in a dish and spread with the wine sauce. Test in case you have to adjust the salt.
Notes & Tips
Replace red wine with dry white wine (which is not acidic) and you will achieve a smoother sauce. You can add spices such as tarragon or cilantro that also combine well with poultry.
