Wash and peel the potatoes and then cut them into slices 2 – 3 millimeters thick and place them in the center of the baking paper forming a layer of potatoes. Place a slice of salmon on top of the potato layer (one for each sheet of paper) then adjust salt and pepper to your liking. Place a few thin slices of lemon on top of the salmon steak and then put the cherry tomatoes cut in half; Then pour a drizzle of extra virgin olive oil over the salmon and close the parchment paper to form a foil without leaving open cracks. Place the various foils on a baking tray and place them in the preheated oven at 180 ° C for 35 minutes. At the end of cooking, remove the tray from the oven with the wrappers on top, open the foils at the top and then bake them again for another 10 minutes in the oven at 180 ° C so that the fish and potatoes dry lightly from the cooking sauce. Once the second cooking phase is completed, you can bring your baked salmon to the table by serving it directly in the foil that you will place on a flat plate.
