Grilled pancetta

I always recommend, if you have a fireplace or a barbecue to make it grilled because the taste is better, but even in the oven or on the griddle, you will still get a good result.

6 slices pork belly

Preparation
We take the slices of pancetta and add salt and pepper on both sides to flavor them. In this case I do not use olive oil, because pancetta is a fatty meat that during cooking already releases its oil, so it is not necessary to add more. At this point, if the embers are ready, place the slices of pancetta on a grill and cook on both sides for a few minutes. I advise you not to keep them too long on the fire, because otherwise the meat dries up, while the pancetta must be well cooked, but at the same time soft. Our roast pork belly is ready, bring it to the table and you will have a second course of tasty meat.
