Chicken strips with mushrooms



Chicken strips with mushrooms is a simple and tasty second course, ideal for lunch or dinner. A creamy and fragrant dish ready in no time: once the mushrooms are cleaned, cut them into slices and cook them in a pan with garlic, oil and chopped parsley. Then add the floured chicken strips to the pan, blend with white wine, add the milk and cook. The final result will be an appetizing and creamy dish: in a single preparation you will make a second course of soft and tasty white meat, complete with a side dish.


Ingredients

CHICKEN BREAST 500 gr
FRESH MUSHROOMS 500 gr
GARLIC 1 clove
EXTRA VIRGIN OLIVE OIL to taste
CHOPPED PARSLEY to taste
FINE SALT to taste
WHITE WINE 1 glass
MILK 2 tablespoons
PEPPER to taste

Method

Clean the mushrooms with a damp cloth, to remove excess soil, and cut them into slices. Sauté the garlic in a pan with extra virgin olive oil. Add the mushrooms and chopped parsley, add salt, pepper and cook over medium heat, stirring occasionally. Place the chicken breasts on a work surface. Cut them into slices, pass them in flour and shake them, to remove excess flour. Place the strips in the pan with the mushrooms. Halfway through cooking, blend with the white wine and, as soon as it has evaporated, add the milk. Continue cooking with the lid, until a thick cream has formed: if it shrinks too much, add a little more milk. Your chicken strips with mushrooms are ready to be served with a sprinkling of parsley.

Recommendations
If you want to make the dish even creamier, you can replace the milk with cooking cream. Those who prefer can prepare a lighter dish, also suitable for those who are lactose intolerant: you can use water instead of milk. In this case you can also enrich the dish with the addition of some cherry tomatoes, if you prefer. The passage of chicken strips in the flour, will make the meat softer.
