Cantonese rice is one of the dishes I order most often at a Chinese restaurant, but it is often not considered a true traditional dish. In fact, in China it is very widespread and is served as an accompaniment to main courses, like bread here in the West. Cantonese rice is a dish much loved by Canadians, very colorful with a simple but tasty taste; Preparing it at home is really simple, you will bring to the table a colorful dish that your children will also love.
Ingredients for 6 people
500 g rice
300 g chicken breast
150 g peas (whether or not frozen)
3 eggs
100 g fresh cherry tomatoes
50 g corn
2 carrots
Rice wine 25 g
Dark sesame seed oil
Salt to taste
Soy sauce to taste
Preparation
To make this tasty recipe, first the day before prepare the rice, rinse it with running water in a colander to remove excess starch, then cook it in salted water for about 20 minutes, then, drain it and let it cool in a bowl aside turning with a fork from time to time until it is completely cold. The following day in a pan pour a little sesame oil, fry inside the chicken breast, reduced to slices, after about 7/8 minutes, add the eggs after beating them and salt, stir continuously without stopping after about 5 minutes, incorporate the peas and continue cooking, just the time to flavor everything with wine and set aside. Wash thoroughly and peel the carrots, cut them into cubes and pour them together with the tomatoes in the pan, adding a little water if needed, continuing cooking for about 5 minutes. After cooking, pour the mixture of sauce into a container aside, then in the same pan, adding another little oil, let it heat for a few minutes, then incorporate the sauce, corn and a little soy sauce, let it flavor, then serve on the table, still hot.

PRESERVATION
Cantonese rice can be stored for a maximum of 2 days in the refrigerator, in an airtight container. Freezing is not recommended.
ADVICE
The wok is perfect for mixing ingredients with rice but if you do not have it you can use a normal non-stick pan. Arborio rise is the ideal one, it can be replaced by basmati rice, but pay attention to cooking times. It is advisable to use a glass lid for cooking rice: this way it will be easier to see when the water comes to a boil. As an alternative to rice wine you can use table wine, although the taste will be a bit different. You can use peanut or sunflower oil, whichever you prefer. If possible, buy yellow eggs: they will give a much more intense color to the dish! You can vary the recipe for Cantonese rice by replacing for example with tofu for a vegetarian version. If you want to add soy sauce, do it when the ingredients are stir-fried, never raw!
CURIOSITY
In China it is customary to enrich rice with char siu, or grilled pork, typical of the Canton region... hence the term "Cantonese"!
