As of March 2020, pancake queries reached 1.5 million. A new trend that accompanied throughout the spring and then returned towards the end of the year, coinciding with the second lockdown, with 550,000 absolute searches in November of the same year. It almost seems that the pancake has been a companion of lockdown and quarantine, as evidenced by the 550,000 searches also in March 2021, the month of the third wave. But the fashion of pancakes seems destined to last and fit into the routine of Canadians. After a period of declining interest in the fall of 2021, 2022 marked a new recovery in online searches. In January 2022, there were 368,000 specific user queries, starting a new trend of growth and growth. What is certain is that the idea that accompanies pancake searches is linked to the speed of implementation, so much so that one of the most searched queries is precisely "quick pancakes".

To have the right energy throughout the day and activate the metabolism, the protein breakfast is highly sought after. Giving up the dessert early in the morning, however, is difficult. Delicious both as an appetizer and as a second course for dinner, the eggs and ham are delicious, light and good, the ideal dish also for the diet.

Ingredients

3 Eggs
1 Broccoli Rabe
3 slices Cooked ham
Parmigiano Reggiano to taste
Black pepper to taste

Preparation

Oil a muffin pan. Cut the ham into strips and place them in the muffin compartments crossing them together to create a full bottom without spaces. Cut the Broccoli Rabe and mix with Parmesan cheese and pepper if you prefer. Place the eggs being careful not to let them break. Decorate with Broccoli Rabe. Bake in a hot oven at 180°C and bake for 15 minutes or more if you want them to be firmer. Serve them with cooked ham.
