Baked rabbit 



Here is one of the most classic recipes to prepare rabbit is baked with potatoes. It is a simple recipe and that will not force you to spend too much time in the kitchen. The baked rabbit with potatoes is a typical Sunday second course, in which you can taste the meat of the rabbit, accompanied by the side dish of potatoes, which are cooked together with the rabbit in the oven. 

Let's say that there are many ways to cook the rabbit, but doing it in the oven with potatoes, in addition to being the simplest preparation, in my opinion is also the best. To prepare the recipe of baked rabbit with potatoes you need to follow the cooking correctly. 

For optimal cooking, put a sheet of aluminum foil on the baking sheet, so that in the first part of cooking both the rabbit meat and the potatoes can cook perfectly. Subsequently, the aluminum foil will be removed, to ensure that everything acquires a beautiful golden color. The result is a tasty baked rabbit with potatoes, which remains tender and succulent.

Ingredients for 4 servings

1 rabbit weighing about 1 kg
600 gr of potatoes
1 knob of butter
diced bacon to taste 
1 onion
1 clove of garlic
1 sprig of rosemary
4 tablespoons extra virgin olive oil
2 bay leaves or sage
1 sprig of chopped parsley
1/2 glass of white wine
1/2 glass of water
salt and pepper to taste

How to cook baked rabbit with potatoes

Wash the rabbit parts under running water and dry them well. Turn on the oven to prune it at a temperature of 180 ° C. Take a baking sheet also suitable for use on flame. If you have not used a pan and after browning the meat you will transfer it to a baking dish. Over low heat, then heat the oil on the heat together with a knob of butter and add the diced bacon. When the dressing is hot and the bacon will begin to fry, add the rabbit, move it often and turn it to brown it on both sides, always over low heat, for at least ten minutes. Meanwhile, peel the potatoes, wash them and cut them into pieces not too small, also wash the flavors (bay leaf, sage and rosemary) and keep everything aside. When the rabbit is well browned, adjust salt and pepper, sprinkle with white wine and let it evaporate over high heat; At this point you can add the potatoes, garlic, bay leaves and sage and sprigs of rosemary. Put the pan in the oven for 50/60 minutes, turning the rabbit and potatoes from time to time and if it dries too much add a few tablespoons broth if you have any. Your baked rabbit with potatoes is ready... Remove the sprigs of rosemary and serve hot!
